GAZPACHO

Ingredients:
- 4 - 6 bags Eat Your Heart Out! Salsa Soybeans
- 1 large cucumber
- 2 large tomatoes, seeded and finely chopped
- 1 large red or green bell pepper, seeded and finely chopped
- 1/4 cup fresh lime juice
- 3 cups vegetable broth (either can or home made)
- 1 cup tomato juice (preferably low sodium)
- 1 clove garlic, minced
- 1/2 cup sliced scallions
- 1 Tblsp. chopped fresh thyme leaves
Procedure:
Peel cucumber and cut in half lengthwise, scape out and discard the seeds. Finely chop the cucumber. In a large bowl, combine the cucumber with the remaining ingredients. Cover and refrigerate for 4 hours or overnight.
If you wish, you may puree the vegetables, but do leave a few chunks - it gives the soup an interesting texture.
Makes 6 - 8 servings.
