APPLE DUSTED HUDSON VALLEY FOIE GRAS

Preparation

  • Grind 2 cups EAT YOUR HEART OUT APPLE CINNAMON WEDGES into a dust, use either food processor, blender or under a heavy saute' pan. Sift out any large chunks and mix with 1 cup AP flour, set aside.
  • Rough chop 1 cup of EAT YOUR HEART OUT APPLE CINNAMON WEDGES, set aside.
  • Reduce 1 cup aged balsamic vinegar to ¼ cup or until thick like syrup; if you reduce the vinegar too much it will lose it's sweetness and become bitter. Hold in warm area.
  • Clean one lobe of foie gras, use A grade, of sinew and tendons from Hudson Valley foie gras. Portion foie gras into 8 thick slices, keep chilled.
  • Wash baby spring greens, if needed.
Execution of dish
  • Heat heavy saute' pan with medium heat.
  • Season foie gras with salt and pepper, dredge in EAT YOUR HEART OUT APPLE CINNAMON dust.
  • Fry gently on each side until well browned, about 2 minutes; if pan is not hot enough it will take foie gras too long to sear. The foie gras will melt away, due to high fat content.
  • Drain onto paper towel and hold in warm area.
  • To make plate
  • Arrange some baby spring greens in center on the plate.
  • Place toast points around greens.
  • Top greens with sauteed foie gras.
  • Drizzle with a little bit of the reduced balsamic vinegar.
  • Sprinkle chopped apple wedges.
  • Serve right away and enjoy.
